Sweet Potato and Lentil Curry


1 1/2 cup dry lentils (or 2 cans of cooked lentils)

2 tbsp. olive oil

 1 red onion, chopped

1 Tbsp. cumin

1 tsp mustard seeds (any color)

1 Tbsp. curry powder

1 large sweet potato, peeled and cut into chunks

salt to taste

1.5-liter water (for cooking dry lentils)



Soak lentils for 2-3 hours

In a large pot combine lentils and water and bring to a boil, cook on medium heat until lentils are soft (about 30-40 minutes) and set aside.

In a medium pot, heat oil, add onions, cumin, mustard seeds, curry powder, sweet potatoes and cooked lentils (or canned). If the mixture is dry, you may add some water and cook on medium-low heat until sweet potatoes are cooked.

Serve with rice or pita!
