Thai green curry spinach soup 

 Ingredients : 
2tsp olive oil
1/2 chopped onion
2 red peppers sliced into sticks
1 cup sliced mushrooms
1 cup chopped spinach
1/2 cup chopped coriander
1/4 cup chopped green onions
100 g rice noodles
2 cups raw shrimp
4 cups chicken broth
1 can coconut milk
4 tbsp Green curry paste
Salt to taste
Directions: 
Heat oil in a medium size pot, fry onions, add spinach and curry paste and cook for 1-2 minutes. Add all the other ingredients and cook on medium heat for 5 minutes or until shrimp is cooked. 
Garnish with coriander and green onions.
