Chicken Koobideh-Grilled Chicken Kabob

  • 1/2 kg ground chicken 
  • 2 green onions chopped 
  • 1 lage onion, grated 
  • 1 tsp liquid saffron 
  • 1/2 tsp salt
  • 1/2 tsp sumac 
  • 1/3 tsp turmeric 
  • 3 tbsp of olive oil 
  • pinch of red chilli pepper
  • black pepper to taste 


  • In a large mixing bowl combine ground chicken and all the other ingredients together except the olive oil. Mix well using your hands. 
  • Leave a cool bowl of water next to you on the counter and wet your hands to make koobideh patties or you may use a kabab skewers to shape ground chicken into shish kabobs. I made patties because they are easy to serve as burgers and kid friendly! 
  • Once patties are made, you may use your preferred method of cooking. These can be baked, cooked in a pan on the stove with olive oil  or barbecued. We decided to BBQ out patties and they came out delicious!!
